We present an easy take on a beverage from the seasonal cocktail list. Designed as a batch pre-mixed that's loaded with tastes of a Christmas time, which makes it excellent for hosting a holiday party. Reserve the remaining cordial to use in morning drinks, puddings, or to make more rounds of the drink.
The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Making the Citrus Syrup: Combine all the ingredients inside a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the stove and leave to reach room temperature completely. Pour into an sealable bottle, seal and refrigerate it in the refrigerator, it will last for around four weeks.
For the Batch Mix: Mix every liquid ingredients into a large bottle, leave to sit for one hour, then strain preferably using cheesecloth, to ensure it's fully clarified.
For serving: Add 85ml of the premix into your cocktail shaker packed with ice, and agitate carefully for one minute to chill. Filter into an chilled martini glass or equivalent, top with some cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
